This is a ~small~ pure refactor that's a step toward SSH remoting. I've
extracted the Project's buffer state management into a smaller, separate
struct called `BufferStore`, currently in the same crate. I did this as
a separate PR to reduce conflicts between main and `remoting-over-ssh`.
The idea is to make use of this struct (and other smaller structs that
make up `Project`) in a dedicated, simpler `HeadlessProject` type that
we will use in the SSH server to model the remote end of a project. With
this approach, as we develop the headless project, we can avoid adding
more conditional logic to `Project` itself (which is already very
complex), and actually make `Project` a bit smaller by extracting out
helper objects.

This PR is an internal refactor in preparation for remote editing. It
restructures the public interface of `Worktree`, reducing the number of
call sites that assume that a worktree is local or remote.
* The Project no longer calls `worktree.as_local_mut().unwrap()` in code
paths related to basic file operations
* Fewer code paths in the app rely on the worktree's `LocalSnapshot`
* Worktree-related RPC message handling is more fully encapsulated by
the `Worktree` type.

We couldn't reproduce the panic, but I believe it was possible when
uninstalling an extension while one if its grammars was still loading.

We noticed the following message in my logs when trying to debug some
lag when collaborating:

That `0/0` looks like a bogus connection id, constructed via a derived
`Default`. We didn't ever find a code path that would *use* a default
`ConnectionId` and lead to this error, but it did seem like an
improvement to not have a `Default` for that type.

As part of this commit, I fixed an issue where we couldn't disconnect and reconnect in tests. The first disconnect would cause the I/O future to terminate asynchronously, which caused us to sign out even though the active connection didn't belong to that future. I added a guard to ensure that we only sign out if the I/O future is associated with the current connection.
We have an hypothesis that the server gets stuck while processing
an incoming message, either because the buffer fills up or because
a handler never completes. This should mitigate that and, once we
add logging, give us some clue as to what is causing it exactly.

Previously, we weren't fully clearing the state associated with projects and worktrees when losing connection. This caused us to not see guest avatars disappear and not be able to re-share upon reconnect.

Also, increase the receive timeout to 30 seconds. We'll still respond immediately
to explicit disconnection, but when there are temporary network blips that
delay pings, we think we should err on the side of keeping the connection
alive. This is in response to a false positive 'host disconnected' state
that we observed when pairing today, while the host (Keith) still clearly
had a working internet connection, because we were screen sharing.

When a network connection is lost without being explicitly closed by the
other end, writes to that connection will error, but reads will just wait
indefinitely.
This allows the tests to exercise our heartbeat logic.
This allows us to drop the context *after* we ran all futures to
completion and that's crucial otherwise we'll never drop entities
and/or flush effects.
